If You Like Beets, You’ll Enjoy This Recipe. If (Like Me) You Don’t, You’ll Love This Yummy Way To “Eat” Beetroot!

Most people either love or hate beets (also known as beetroot).  I fall into the latter category – what about you? But beetroot / beets are really healthy, so I was delighted to discover this recipe for a Cherry Beet Smoothie from Jen Hansard at Simple Green Smoothies.

It’s yummy – because you don’t taste the beetroot, which makes it perfect for those of you (like me) who don’t like beets!

The only issue I have with this recipe is that there’s more fruit than vegetables in it. To be truly healthy, you always want to have more veggies than fruit. However, an occasional fruity smoothie is good for a change, so here goes!

Why Beets & Cherries Are Good for You

fresh cherriesBeets are chock full of folate, as well as fiber to keep you feeling full and keep things moving.  And they contain antioxidants too.

(You can also use the beet greens, like any other greens, in juices and smoothies, so there’s no waste).

Cherries are anti-inflammatory and help with post-exercise muscle soreness and sleep.

How to Buy or Prepare Beets 

beets for a cherry beet smoothieYou can prep beets yourself, or buy them ready prepped.

  • You can buy frozen beets that are already chopped so you can add them straight into your blender.
  • You can also buy fresh beets that have already been peeled and steamed. They’re normally in the refrigerated produce section of grocery stores.
  • To prep beets yourself, simply use a vegetable or potato peeler to peel off the top layer. Then chop them into smallish chunks.
  • If your blender is not that powerful (mine isn’t), then you’ll want thaw frozen beets a little before blending, or else use cooked beetroot because it’s softer.
  • To cook the beets for this smoothie, steam them for about 15 minutes or until tender. Let them cool before blending them.

Cherry Beet Smoothie Recipe

Combine sweet beets with tangy cherries for a power-packed, bright red cherry beet smoothie.  It yields 16 ounces or about 450 ml.

cherry beet smoothie1/4 cup prepared beets or beetroot (see above for how to buy or prepare it)
1 cup / 225g pitted cherries
¼ banana, frozen
½ cup / 120 ml unsweetened pomegranate juice
½ cup / 120 ml water

Put all the ingredients into your blender and blend until smooth.
